A chewy buttery tasting pancake filled with crushed peanuts. Great for an afternoon snack or dessert.
Pancake
- 1 cup flour
- 1 1/4 cup water
- 1 tsp baking soda
- 1 egg - beaten
- pinch of salt
- 2 tbsp sugar
Peanut Filling
- 1 cup peanut (ground in food processor or chopper)
- 1 1/2 tbsp sugar
- 1/2 tbsp butter to each pancake
- Variation for filling: Cinnamon/Walnut filling: 1 tbsp cinnamon, 1 tbsp sugar, 1/2 cup walnuts-ground
Directions
- Mix flour, water, baking soda, salt and sugar together.
- Mix in 1 beaten egg into dry mixture.
- Add water to all ingredients and mix well.
- For filling: mix ground peanuts and sugar together (or for cinnamon/walnut filling: mix cinnamon, sugar and ground walnuts together)
- Heat 5 inch pan. Melt 1/2 tbsp butter to cover bottom of pan.
- Scoop about 1/2 cup flour mixture into bottom of pan. Spread evenly.
- Spread filling over flour.
- Place 1/2 tbsp butter on top of filling.
- Cover pancake for 3 minutes or until bottom is slightly browned.
- Flip 1/2 of pancake over like omelet.
- Remove from heat and serve warm with tea.
