Peanut Pancake

A chewy buttery tasting pancake filled with crushed peanuts. Great for an afternoon snack or dessert.

Pancake

  • 1 cup flour
  • 1 1/4 cup water
  • 1 tsp baking soda
  • 1 egg - beaten
  • pinch of salt
  • 2 tbsp sugar

Peanut Filling

  • 1 cup peanut (ground in food processor or chopper)
  • 1 1/2 tbsp sugar
  • 1/2 tbsp butter to each pancake
  • Variation for filling: Cinnamon/Walnut filling: 1 tbsp cinnamon, 1 tbsp sugar, 1/2 cup walnuts-ground

Directions

  1. Mix flour, water, baking soda, salt and sugar together.
  2. Mix in 1 beaten egg into dry mixture.
  3. Add water to all ingredients and mix well.
  4. For filling: mix ground peanuts and sugar together (or for cinnamon/walnut filling: mix cinnamon, sugar and ground walnuts together)
  5. Heat 5 inch pan. Melt 1/2 tbsp butter to cover bottom of pan.
  6. Scoop about 1/2 cup flour mixture into bottom of pan. Spread evenly.
  7. Spread filling over flour.
  8. Place 1/2 tbsp butter on top of filling.
  9. Cover pancake for 3 minutes or until bottom is slightly browned.
  10. Flip 1/2 of pancake over like omelet.
  11. Remove from heat and serve warm with tea.
