Beef Vegetable Stew

Ingredients:

1 lb beef - cubed
1/2 medium onion - sliced thinly
2-3 cups beef broth
2 cloves garlic
2 tomatoes
2 ribs celery
2 carrots
1 cup mushrooms
salt/pepper
1-2 tsp garlic powder
1-2 tsp crushed chilli (optional)
3 medium potatoes
1 cup peas

Directions:

  1. Cut all vegetables into bite sized chunks.
  2. Marinade beef with crushed chilli peppers, garlic powder, salt and pepper.
  3. Sear beef cubes briefly in pan in oil.
  4. Add vegetables into pot and fry briefly.
  5. Add beef broth.
  6. Let simmer for 20 minutes or until vegetables are tender but not overdone.
  7. Serve with grilled cheese sandwich or crackers.
